You should also be aware that "lack of cleanliness" is the number one reason that a customer fails to return to a restaurant. - 05/07/2009

Have you ever noticed all the employees that go around sweeping up trash at Disneyland? They're everywhere. Considering how many people who go through their theme parks every day it is amazing how they manage to keep the park so clean. I am told Walt Disney himself viewed cleaning as a marketing expense and that's what would keep people coming back and why people tell everyone else what a great place Disneyland was to visit.

Your restaurant's atmosphere needs to be consistent with the type of restaurant your customers want. If you want to be fine dining and high price, you better have that kind of atmosphere. If you want to be casual, then your employees and atmosphere had better reflect that. You'll find you'll miss out on a lot of customers if you have a fancy upscale environment with mid range prices and casually dressed staff. Your customer's may be confused and feel uncomfortable about coming into your restaurant or think you are way more expensive than you are.

Beyond the physical environment of your restaurant, you want to make sure that your restaurant is a pleasant place to visit. That means you want to make sure that all your employees enjoy their work and that you realize that the employees attitude in doing their jobs impacts the kind of experience your customer has and their likelihood of coming back. This creates an atmosphere that everyone enjoys.
